A species, mostly appearing in Asia as working animals with an extra trait that it produces milk. In Europe the species are mainly held for their milk which is rich of fat. Compared to milk from dairy cattle, water buffalo milk contains higher levels of crude protein, fat and calcium, making it especially usefull in the processing of hard dairy products, such as cheeses. One of the most famous products produced from its milk is mozzrella cheese.
Buffalo keeping and milking is a specialty that is increasingly practiced all over the world, but originated from Asia. Asia still accounts for over 95% of the worldwide population and for about 80% of the buffalo milk production worldwide. Compared to dairy cattle, the species has a rather low production, and therefore held to process their milk in dedicated products which require the input of this rich type of milk.

A Water Buffalo has a different scientific classification as cattle. Although scientific related in the same family and subfamily, it is a completely different species. The official species of the Water Buffalo is Bubalus bubalis, whereas cattle is classified in the species Bos taurus. Originally the species were especially suitable for tilling rice fields and in addition to that purpose they produce a richer type of milk compared to that from dairy cattle.
The species originates from areas in India and Asia, but nowadays kept in numerous regions all over the world, such as Europe, Australia, North America, South America and parts of Africa. However, still over 95% of the total population of the species can be found in Asia. For example in Pakistan, the Water Buffalo is the main dairy animal, providing the local population with dairy and meat.
