The Assaf is a large-sized sheep, with a well-muscled body, suitable for both milk and meat production. The breed typically has a white coat with some of the sheep having red or black coloring on the face and limbs. with a strong, sturdy build. The sheep are well-adapted to various climates, including the hot, dry conditions of their native Israel. They also perform well in temperate climates. Assaf sheep thrive under different management systems, from intensive dairy operations to more extensive, pasture-based systems.

Assaf sheep are a recent breed, developed about 50 years ago in Israel through the crossbreeding of the East Friesian breed and Awassi breed, aiming to develop a dairy sheep breed robust enough for the region. In Israel they are raised and managed under an intensive production system, this system involves weaning lambs at birth, rearing lambs artificially and milking ewes after parturition.
Besides the presence of the breed in Israel, it has been exported short after its development to mainly Spain and Portugal for the production of cheese. Exports were done in several forms, including live exports, semen exports and embryo exports. Currently the breed has been exported to Chile, Peru and the United States as well.
